* TESSA’S SICILIAN DISH.

SICILIAN DISH
1 BULB OF FENNEL
I TIN OF SARDINES IN OIL OR SPRING WATER.
2 GENEROUS TABLES SPOONS OF FLAT LEAF PARSLEY CHOPPED.
A SLUR OF CHILI PASTE OR A SMALL CHILI
A SLUR OF GINGER
AND A COUPLE GLOVES OF CRUSHED GARLIC
COOKED SPAGHETTI ABOUT THE SAME AMOUNT AS THE SLICED FENNEL.
PECORINO CHEESE GRATED
A HAND FULL OF FAKED ALMONDS
A HANDFUL OF RAISINS
A FEW CHERRY TOMATOES OPTIONAL.

  • cut the fennel in half, and remove the core.
  • slice the fennel thinly.
  • put some oil in pan from the sardines.
  • fry fennel, garlic, chili, and ginger gently for abut 5 minutes.till cooked and slightly colored.Add parsley tomatoes,cook one minute.
  • add the cooked spaghetti to the ingredients and the flaked sardines.
  • give it a good stir, and take off of heat and serve.
  • serve in bowls, or on plates if preferred.
  • grate pecorino cheese over the top and sprinkled flaked almonds,and a few raisins.and a bit more parsley.
