* Ricotta Cheesecake – From Jolanta

Ingredients

1 kg ricotta cheese, drained

1 tblsp grated lemon rind

¼ cup lemon juice

¾ cup caster sugar

5 eggs

½ cup sultanas

Oven on 160C.

Mix sugar with 5 eggs well and add remaining ingredients.

Pour mixture into tin and bake cheesecake for about 50min. Cool in an oven with door ajar.
