* Health Corn Bread – Family recipe in USA – from Cherie Tilley

1+2/3 cup stone-ground cornmeal
1 + 2/3 cup SR Flour
2 + 1/2 tablespoons sugar
4 tablespoons baking powder
1 teaspoons salt
2 eggs
1/2 cup olive oil
1 + 2/3 cup buttermilk
2 ears fresh corn
2 tablespoons Logical or Butter
~preheat oven to 180 degrees C
~mix cornmeal, flour, sugar, baking powder & salt
~in another bowl whisk eggs, oil & milk
~mix above until combined
~add corn
Preheat cast iron skillet & add butter (or grease
well loaf pan, round pan or muffin tin) depending
on what format you use decides time baked.
Bake 35-40 mins then lightly rub marg on top.
Muffins will take around 20 min

  1. love corn bread. I didn’t have any stone ground corn meal, so i GOOGLED how to make corn meal and found someone who had made it out of popcorn (unpopped) in his grain mill. Gave mine 1 min in my German miracle = Thermomix and voila! corn meal! thanks for this great recipe!
