* Almond and Cinnamon Rice by Jane Dolorise


Serves 4 as a side dish

This recipe can be made for dinner or as a side dish.

Dairy free, Gluten free, Wheat Free

Ingredients – all ingredients organic where possible
1 tbsp olive oil

1 small onion, finely chopped 
1 cup long organic brown rice, washed and drained 
4 sprigs thyme
1 stick cinnamon  
1/3 cup organic blanched almonds toasted  
4 tbsp organic seedless raisins  
2 tbsp lemon juice
1 lemon zested  

Method
Heat the oil in a pan and gently sauté the onion for 2 minutes. Add the rice, thyme and cinnamon stick and 2 cups of water and bring to the boil. Cover the pan, reduce the heat and cook for 20 minutes or until the rice is completely cooked through. Look at the rice every now and then and see if you need to add water. Remove the cinnamon stick and stir through the almonds, raisins, lemon juice and zest.
